What is Taproom Menu Engineering?

In it's simplest form, menu engineering is the science of having your guests select the food items that provide them the most enjoyment and give you the most profit.

Sounds easy, but how exactly does this work?

The process of menu engineering requires that you follow a simple rule:

Give people what they want, because that's what they want. 

Show them the menu items that are most popular and are most profitable for your taproom. 

The most popular items are easy to identify:

Use your POS system and run a sales report. What are the top sellers? Make sure these are clearly displayed on the menu, on table tents, and on the specials board. 

The most profitable items might take a little bit of work to figure out.

Someone in your beer business needs to be responsible for entering and updating the costs of your menu items.

Once you have the costs, compare to the price and determine your margins. The highest margins are the most profitable. 

In order to win at the food game, you need to give people the food items they want and that are most profitable for your business.  Menu engineering is the process to use to achieve this goal.
